Papas con Salchicha Tacos with Salsa Verde

Roast the poblano peppers over an open flame until charred on all sides. Transfer to a covered bowl and let steam for about 10 minutes. Peel, remove the stems and seeds, and slice into rajas.

Heat the oil in a large skillet over medium heat. Add the potatoes and cook until tender and golden.

Add the onion and poblano rajas and cook until the onion begins to soften.

Add the sliced Farmer John Hot Louisiana Smoked Sausage and continue cooking until heated through, tossing everything together in the skillet.

Spoon the papas con salchicha into warm corn tortillas and top with salsa verde, sliced avocado and fresh cilantro. Serve right away and enjoy!
