CHEF MERITO QUESABIRRIA TACOS

1. Cut beef into 4-5-inch cubes and place in mixing bowl. Add adobo to coat meat, then add tomatoes, onions, sugar, and let marinate for 3 hours. For best results, marinate overnight.
2. In a stock pot, add water and place beef on medium-low heat. Let it cook for 3 ½ hours, stirring every 20-30 minutes, and add salt to taste.
3. Once the beef is tender, shred the meat and spoon it onto a dish. Dip tortillas in the remaining sauce and sauté them. Top the tortillas with Oaxaca cheese to your liking and melt it. Once melted, fold the tortilla and serve with garnish.
