Preheat oven to 400°F (200°C). Roughly chop gold potatoes, bell peppers, and red onions. Toss them with a drizzle of oil (optional) and season with salt and pepper on a large sheet pan. Roast for about 15-20 minutes until vegetables start to soften. Remove the pan from the oven. Make a few wells in the vegetables and crack eggs directly into them.
